Apple Turnovers for The Mustard Seed YEG
Apple Turnovers Recipe:
Ingredients:
Apple Filling:
1.5Lbs Apples
25g Butter
50g Brown Sugar
1.5g Cinnamon
1g Salt
Icing:
60g Icing Sugar
13g Milk
1g Vanilla
500g Puff pastry
Procedure:
- Pull puff pastry from the freezer the night before. (If you would like to make your own I have a separate recipe for it, if you would prefer to skip that step I recommend the tenderflake puff pastry from the store)
- Peel, core and dice apples to ¼” thick squares. Melt butter in a medium saucepan on medium heat and cook apples until slightly softened, about 5 min. Add brown sugar, cinnamon and salt and cook on med/low for another 3 min or until apples have softened and caramelized a bit. Let cool
- While the apple filling is cooling, roll puff pastry to a 9 by 18 rectangle. Cut 8 4.5” squares and place back in fridge until apple filling is cool.
- Preheat oven to 400ºF.
- Using 1 egg and a splash of milk or cream, beat egg wash with a fork.
- Place apple filling on ½ of youre puff square leaving ¼ inch around the outside. Egg wash one half of the puff square. Fold the puff square in half, pinching together the sides until you have an enclosed triangular pocket.
- Using a fork crimp where you pinched to seal.
- Using a sharp knife, score 3 lines on the top.
- Egg wash and bake for 20-23 min until golden brown.
- While cooling, whisk together icing sugar, milk and vanilla to make your icing. Drizzle on once cooled and let set.
Makes 6-8 apple turnovers
