Chocolate Zucchini Muffins for Water Warriors YEG

Chocolate Zucchini Muffins Recipe:

Ingredients:

1 whole     egg

165g          brown sugar

90g           canola oil

5g              vanilla

2.5g           salt

14og          zucchini

112g          AP flour

32g            cocoa powder

2.5g           baking powder

3g              baking soda

3g              cinnamon

90g           chocolate chips

Procedure:

-      Preheat oven to 325ºF and line a muffin tin with 10 liners.

-      Grate the zucchini.

-      Whisk together egg, brown sugar, canola oil, vanilla, and salt. Fold in grated zucchini.

-      Sift together flour, cocoa powder, baking powder, baking soda, and cinnamon. Fold into wet ingredients.

-      Fold in chocolate chips.

-      Scale into muffin tins at 65g each.

-      Bake for 25 min or until toothpick comes out clean
