Mixed Berry Crumble Bars for the Canadian Native Friendship Centre
Mixed Berry Crumble Bars Recipe:
Ingredients:
Crumble base:
208g sugar
423g AP flour
5g baking powder
1g salt
1 whole lemon (zest)
1 whole egg
227g butter
2g vanilla
Berry Filling:
600g frozen mixed berries
95g granulated sugar
12g tapioca starch
1 whole lemon (juice)
Procedure:
o For the crust combine all dry ingredients and zest. Add cold cubed butter and wet ingredients. Mix until crumbly.
o Use 580g of the crumble mixture to cover the bottom of a parchment lined and buttered 8x12” pan.
o For the filling, thaw the berries. Whisk together sugar and starch to prevent clumping. Add lemon juice and then the sugar/starch.
o Place filling on top of crust.
o Sprinkle the rest of the crumble topping over the filling
o Bake for 20-30 min at 375ºF or until top is golden and fruit is soft and bubbling.
o Slice into 2x2 squares when cool.
