Lemon Maple Pecan Loaf for the Red Cross Ukraine Humanitarian Crisis Appeal 

Lemon Maple Pecan Loaf Recipe:

Ingredients:

225g  all-purpose flour

5g       baking powder

185g  butter

77g     granulated sugar

65g     chopped pecans

3 large eggs

20mL milk

90mL maple syrup

9g       lemon zest (1 lemon)

48g    icing sugar

12g     lemon juice

Procedure:

o  Preheat oven to 325ºF (convection, 350ºF regular).

o  Grease your baby loaf pan or your 9 by 5 loaf pan and line the base with parchment.

o  Whisk together flour and baking powder and then using your hands or a pastry cutter, cut in the butter until the mix resembles breadcrumbs.

o  Add in sugar and chopped pecans.

o  In a separate bowl beat together eggs, milk, lemon zest and maple syrup.

o  Add your wet ingredients to the dry gently folding until just incorporated. (the batter will be lumpy, don’t worry about it)

o  Pour your batter into the prepares tins and bake for 30-40min until lightly brown. Use the toothpick test to determine the bake on the inside – should come out clean.

o  Let cool on a wire rack while making the glaze.

o  Sift icing sugar into a bowl and then whisk in the lemon juice, while the cake is still slightly warm use a spoon or a piping bag to drizzle glaze over the top. If you would like a more definitive icing, wait until loaves are completely cool and then spread on top.

Makes 3 baby loaves @ 275g or 1 large loaf
