Pumpkin Pie

Pumpkin Pie for the Canadian Cancer Society 

Pumpkin Pie Recipe:

Based off the old Canadian living book (harvest pie)

Ingredients:

Pastry

142g AP flour

1.7g  salt

39g   lard

39g   butter

2.5g  vinegar

17g   egg

24g   cold water

 

Pumpkin Filling

334g pumpkin puree

85g   brown sugar

1       egg

0.7g  allspice

0.43g ginger

0.32g nutmeg

1.3g  cinnamon

1.5g  salt

174g cream

 

                           

Procedure:

Pastry

1.    Combine dry ingredients.

2.   Cut in cold lard and butter until almost fully incorporated; looks like crumbly oats almost.

3.   Add liquid and delicately knead as little as possible until all of the dry has been hydrated.

4.   Wrap and let rest in the refrigerator for 1 hour.

 

Pumpkin filling

1.     Whisk together egg, pumpkin puree and sugar.

2.   Add spices.

3.   Add cream.

 

Assembly

1.    Roll your pastry to a 12 inch circle.

2.   Place in your pie dish making sure the bottom is properly pressed in.

3.   Trim the edges and fold over. Crimp your edges in the preferred style.

4.   Let chill in the fridge while making pumpkin filling.

5.   Pour pumpkin filling in your prepared pie shell.

6.   Bake 15 min @ 425ºF and then reduce the temperature to 350ºF and bake for an additional 45 min or until the toothpick/cake tester comes away clean.

 

Makes one 9” pumpkin pie
