Berry Almond Tarts for the Native Women's Association of Canada
Berry Almond Tarts Recipe
Ingredients:
Pate sucree:
159g AP flour
49g icing sugar
94g butter
23g almond flour
0.65g salt
0.65g vanilla
Strawberry Rhubarb Compote:
102g frozen rhubarb
153g frozen strawberries
20g granulated sugar
17g lemon juice
Almond Cream:
115g butter softened
115g granulated sugar
115g almond flour
1g salt
2 whole eggs
1 pint of fresh strawberries
Procedure:
Pate sucree
o Sift flour, icing sugar, almond flour, and salt into a stand mixer.
o Add butter and mix until it comes to a sandy consistency.
o Add egg and vanilla until dough just comes together.
o Hand work in any remaining dry bits.
o Wrap and chill for 2-3 hours.
o Roll dough to 1/2inch thick, cut a 4 inch diameter circle (should approximate to 30g).
o Line in a heavily buttered muffin tin.
Strawberry Rhubarb Compote
o Place frozen rhubarb and lemon juice in a pot.
o Cook over medium heat until rhubarb has completely defrosted.
o Add in strawberries and cook for another 5 min.
o Once fruit is fully separated, add in the sugar.
o Cook until strawberries are soft and rhubarb has fully cooked down – (you shouldn’t be able to see a piece of rhubarb)
Almond Cream
o Mix together almond flour, granulated sugar, and salt.
o Add to a stand mixer with the butter and beat until light and fluffy.
o Add in eggs one at a time to keep emulsion – its best if they are at room temperature.
Finishing
o Preheat oven to 350ºF or 325ºF convection
o Add 20g of compote to the bottom of the tart shell.
o Add 30g of almond cream on top, level with a small palette knife.
o Bake for 40 min, rotating the pan halfway through.
o The tarts will be done when the almond cream is cooked – use a toothpick to test.
o TIP* the pastry on top may cook faster than the rest of the tart, if it starts gaining too much colour, place a piece of tinfoil or parchment over the top.
o To finish slice 2 strawberries length wise about 6 slices each. Lay flat nicely over the top.
